Brain Mellor's Murder.

It has been over a year now since we have lost Brain Mellor to his tragic murder. Brain was our famous volunteer that would wear our sign like body armor while standing in front of the soup kitchen, waving at everyone who drove by. Brian was a man who was always happy, praising God and willing to help anyone in need. He was a good man and still is greatly missed every Wednesday we serve lunch.

  • 1 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 (4 ounce) can chopped green chiles, drained
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 2 (16 ounce) cans BUSH’S® Great Northern Beans
  • 1 (14.5 ounce) can chicken broth
  • 1 1/2 cups finely chopped cooked chicken breast
  • Shredded Monterey Jack cheese (optional)
  • Sour cream (optional)

  1. In large skillet, cook onion in olive oil until transparent. Add chiles, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add cooked chicken; cook until hot.
  2. Garnish with cheese, sour cream and salsa, if desired.

At the Soup Kitchen the sour cream isn't an extra, its a must. We like to add it before the soup boils. This adds a nice creamy texture.
Sometimes a can of Rotel can add a nice kick if your in the mood for it.

Fall Recipe; Sausage, Cranberry, and Apple Dressing

Non-Traditional Dressing
This non-traditional way of making dressing has become a hug hit around the soup kitchen the last few years. The sausage, cranberry and apple bring three great flavors together to only further complement a Thanksgiving or harvest meal.

Chefs Recommendations:
Chef Roger wanted a side dish that would let his guest know that they are special, and worth the extra time this meal took to prepare.

Chef added extra poultry seasonings, sausage, rosemary, and broth to taste. He replaced the cranberries with raisins.

Fall Recipe; Creamy Sausage and Potato Soup

Creamy Sausage Soup

Creamy Sausage and Potato Soup
The sausage takes center stage in this soup with the vegetables rounding out the bold flavor. The warm, creamy texture makes it easy to ask for a second bowl.

Chefs Recommendations:
Chef Troy wanted an authentic German flavor with this soup, so he ditched the corn and carrots, letting the sausage and potato speak for them selves.

Add extra salt, pepper and sausage to taste. If you're feeling more Italian then German, then add some chopped Kale just before serving.

Find recipe at: http://bit.ly/1nbeQT3

This soup was prepared in our kitchen by Chef Troy on September 19, 2014.
